Easy Lentil and Carrot Curry

Ingredients:

0.5 of Brown Onion

1.0 of Clove Garlic

1.0 Tbsp of Olive Oil

1.0 of Carrot

1.0 of Can Lentils

1.0 Tbsp of Curry Powder

0.5 Tsp of Smoked Paprika

0.5 Tsp of Cumin

4.0 Tbsp of Tomato Paste

1.0 of Can Full-Fat Coconut Milk

1.0 Cup of Vegetable Broth

0.0 of Salt

(optional)
Instructions:
- Grate the carrot, finely dice the onion and garlic, and drain the lentils.
- Heat olive oil over medium to high heat. Add the onion and carrot and sauté for 2 - 3 minutes. Add the garlic and spices and sauté for a further 1 - 2 minutes.
- Add the tomato paste, lentils, coconut milk, vegetable broth, salt, and pepper and mix well. Bring to a simmer then reduce the heat to low to medium and cook for 10 - 15 minutes, stirring regularly, or until the curry has thickened. Remove from heat.
- Serve hot optionally garnished with coconut cream and fresh herbs. Serve with rice or toast.
